Great for a convivial game-day lunch or Saturday braai, these Bratwurst “Boerie” rolls add a little German flavour to traditional South African boerewors rolls. The caramelised red wine onions provide an elegant angle to the smoky sausages, as does a few glasses of our Rouge 2022

Ingredients

  • 4 large smoked Bratwurst sausages

  • 4 soft rolls, halved

  • 1 large brown onion, peeled and thinly sliced into rings

  • 1 medium red onion, peeled and thinly sliced into rings

  • 15ml butter

  • 15ml brown sugar

  • 100ml dry red wine

  • Mustard-infused mayo and pickles, to serve

Directions

  1. In a saucepan, melt the butter over medium heat and add in the sliced brown and red onions. Once the onions have just softened, add in the brown sugar. Once the sugar has melted and the onions have caramelised, stir through the red wine and leave to reduce. Keep the onions warm until needed.
  2. Slice a few diagonal cuts into each Bratwurst and either pan-fry or braai for 2-3 minutes per side. Lightly toast the rolls and spread liberally with the mustard-mayo (5ml each of mild German mustard and grainy Dijon mustard into 100ml mayonnaise) and red wine onions. Top each roll with a sausage and serve with pickles and Alto Rouge 2022.
